Cut the cabbage into 2-inch-wide strips

Massage salt into the cabbage

Add enough water to cover the cabbage and weigh it down with something heavy

Let it sit for two hours 

Rinse and drain the cabbage with cold water 3 times

Add garlic, ginger, sugar, gochugaru, fish sauce, shrimp paste, or water and stir into a smooth paste. 

Combine the vegetables and spice paste

Pack the Kimchi into a jar

Let it ferment for 1 to 5 days

Check it daily and refrigerate when ready
