Craving South- Indian? Try this Healthy Millet Dosa

This crispy dosa without rice makes a healthy and diabetic-friendly breakfast

Place Foxtail, little millet, and kodo millet in one container & urad dal & fenugreek seeds in the second

Wash them with cold water and soak them for 8 hours

Soak poha (flattened rice flakes) for 20 minutes

Drain the water from urad dal, poha and millets

As necessary, add a little water to the millets, urad dal, and flattened rice flakes (poha) to create a smooth batter

Keep the batter in a container and allow the batter to ferment

Add salt and the necessary amount of water once the batter has sufficiently fermented

Heat a pan over medium flame and pour a ladle full of batter on hot dosa pan

Spread the batter in a circular motion with the back of a ladle

Fold it gently, once the base gets crispy light brown 

Healthy Millet Dosa is ready to be served with hot sambar.
