What is Glycemic Index?
The glycemic index evaluates how foods affect blood sugar levels after eating. Foods are classified as low, moderate, or high based on their glycemic index scores. Foods with a GI score of 55 or less are considered to have a low glycemic index, while those with a GI score of 70 or more are considered to have a high glycemic index.
