How to Make a Healthy Broccoli Soup?
On chilly winter days, a cup of hot broccoli soup is the perfect comfort meal. This traditional soup recipe is simple enough for a weekday supper and nearly fully cooked in one pot.
This quick and simple cream of broccoli soup takes less than 30 minutes to prepare and is smooth, delectable, and creamy. This soup is one of my go-to weekday meals since it's simple to prepare and simple to clean up, plus it's packed with fresh broccoli and a few other cupboard essentials.

Method to Prepare the Soup
Step 1
Heat the butter and oil until the butter melts. Add the onion and celery, and simmer, stirring occasionally, for 4 to 6 minutes, or until tender. Add the garlic and thyme (or parsley) and stir-fry for 10 seconds or until fragrant.
Step 2
Add broccoli and mix. Add water and broth, and then heat to a vigorous simmer. Cook for approximately 8 minutes, or until very tender, while reducing heat to maintain a brisk simmer.
Step 3
Blend the soup in batches until it is completely smooth. Add the salt and pepper as per requirement.
