How to prepare spiced plum cake

To make a spiced plum cake, you will need the following ingredients:

  • 1 + 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 2 cups chopped fresh plums
  • 2 tablespoons packed light brown sugar
  • 1 tablespoon of all-purpose flour
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon unsalted butter

Here's how to make the cake:

1. Preheat your oven to 350 degrees Fahrenheit and lightly grease a 9-inch round cake pan.

2. In a medium-sized bowl, whisk together the flour, baking powder, and salt.

3. In a separate large bowl, beat the butter and sugar together until light and fluffy. Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.

4. Gradually add the flour mixture to the butter mixture, alternating with the milk and mixing until just combined.

5. In another small bowl, toss the chopped plums with the brown sugar, flour, cinnamon, and nutmeg.

6. Pour half of the batter into the prepared cake pan and top with half of the plum mixture. Repeat with the remaining batter and plum mixture, spreading the batter evenly and making sure the plums are evenly distributed.

7. Dot the top of the cake with a tablespoon of butter.

8. Bake the cake for 45-50 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Your spiced plum cake is now ready to serve! This cake is delicious on its own, but you can also serve it with a dollop of whipped cream or a scoop of vanilla ice cream. Enjoy!
