Besan ke laddu: Made with ghee, sugar, gram flour and cardamom. It is the best choice for the festival significantly during Ganesh puja. To make laddoos, first put ½ cup of ghee/ clarifies butter in a pan, add 2 cups of coarse besan/gram flour to it and roast it for 15-20 minutes on a medium flame to bring out the aroma. Keep stirring constantly. Try not to over roast. After roasting the gram flour, add 1 cup of sugar, 4 pods of cardamom, 2 tbsp of melon seeds and 2 tbsp of cashew. Give it a mix and let it cool a bit. After some time put some ghee on your palms, take some amount of that mixture and shape them with your hands. Your tasty besan laddoos are ready to serve.
Chocolate-oreo laddoos: Even kids nowadays want to take part in the kitchen preparations, but the high flame and hot utensils is a complete no when kids are around. This smokeless cooking recipe is best for kids to prepare. For this you require 6-8 oreo biscuits, some chocolate syrup, 6-8 pieces of Britannia fruit cakes and some sliced dry fruits. Crush all the biscuits in a bowl, now with your clean hands crumble the fruit cakes and pour some chocolate syrup over the dry ingredients. Mix all the elements together and shape them in spherical shape. Your chocolate-oreo biscuits are ready.
Malpua: This is one of the exotic sweet dishes prepared in north India. That rich taste and soothing aroma can melt anyone’s heart. To make this you need 1 cup of all purpose flour (maida), 2 tablespoon of khoya, 1 teaspoon of powdered green cardamom, 2 tablespoons of chopped pistachios, 1 tablespoon semolina (sooji), 1 ½ cup refined oil, saffron and water as required, 1 ½ cup sugar syrup and 10 gms of rabri. In a bowl and mix khoya, maida, sooji and cardamom powder. Then gradually add water to make malpua batter. Make sure that the batter is of pouring consistency and not too thick. Once it’s done, keep it aside to rest for a bit. In a small bowl, soak some strands of saffron to make saffron water. Now, heat the oil on low flame in a pan and when it’s hot enough pour a ladleful of batter and let it cook until it turns golden from one side. After that flip it to the other side and let it cook. Then after it’s cooked from both sides, take the malpua out on a tissue paper and drain excess oil. Now drop the malpua in the sugar syrup and let it soak for 10-12 minutes. Cook the whole batter in the same way and place all of them on a platter together, pour some rabri on top of them and garnish with some pistachios and saffron water.
Besan ka halwa: Here comes another easy to make gram flour recipe to enjoy. For this you need ½ cup of ghee/clarifies butter, ½ cup besan/ gram flour, 2 tbsp rava/ semolina/ sooji, 2 cup milk, 2 tbsp saffron milk, 2 tbsp chopped cashew/ kaju, and ¼ tsp of cardamom powder. Ina large kadhai heat up the ghee and add 1 ½ cup besan and 2tbsp rava. Roast the mixture on a low flame while stirring continuously for 25-30 minutes until it turns golden brown in colour. Now add 2 cups of milk and keep stirring until the milk is absorbed without forming lumps.
Cook until the mixture starts separating from the pan. Now add ½ cup of sugar and 2 tbsp of saffron milk and mix well till it separates from the pan. Last but not the least, add 2tbsp of cashew and ¼ tsp of cardamom and mix well. Plate the halwa and garnish it with some more cashews. Besan ka Halwa is ready.
Rose Barfi: Unique, festive Indian cuisine which is tasty as well as flavorful. The ingredients are very concise. For this you need 3 cups of paneer/ cottage cheese, 4 drops of rose essence, 4 tbsp powdered sugar, 1 cup khoya, 4 drops of edible food color, and silver leaf and some pistachios for garnish. Crumble the paneer in a large bowl and crush some khoya into it, combine the mixture after adding rose essence and powdered sugar to it.
Divide the mixture into 2 bowls and add some red food color to one of them. Layer both the mixtures one on top of the other in a plate and put it in the refrigerator to set. Garnish it with silver leaf and pistachios. Your tasty and exotic rose barfi is ready to bite.
