It's ironic, because fermented eggs aren't new. They've been prepared and consumed for thousands of years, but due to their health benefits, people are now again paying attention to them. 

One of the major advantages of fermented eggs is their high quantity of beneficial bacteria and their capacity to boost gut health, which is crucial to overall health. Gut health is an important component of our immune system, and a sick gut may cause more than just stomach problems. 

I've been learning more about how important they are, and I believe that everyone should consume more of them.  

But what’s exactly is a fermented egg, how does it taste like and what are its health benefits? Everything will be revealed: 

What is a Fermented Egg? 

  • A preserved duck egg, often known as a "thousand yearegg," is a fermented Chinese delicacy. 

  • Caking the egg in a mixture of quicklime, salt, and ash, with tea leaves or rice husks thrown into the mix, is a traditional method for preparing.

  • The yolk turns a dark green to grey color as the process continues.

  • Due to the hydrogen sulphideand ammonia, it develops a creamy consistency and a pungent flavor. 

  • The egg white turns into a dark brown, transparent jelly.

  • The century egg's transforming agent is an alkaline salt that progressively elevates the egg's pH to roughly 9–12 during the curing process.

  • The chemical process disintegrates the complex, flavorless proteins and lipids, resulting in a variety of smaller flavorful compounds.

 What does it taste like? 

  • Fermented eggs are regarded as a delicacy in Chinese culture, however they are an acquired taste. 

  • It's impossible to offer a precise description of what it tastes like because there are several ways to prepare this dish, all of which produce diverse flavors and textures.

  • Earthy with undertones of ammonia is how most people describe the flavor.

  • However, several people have said it tastes like rotten cheese.

 Health Benefits: 

  • A good digestive system and gut- Fermented eggs help to maintain a healthy balance of beneficial and harmful bacteria in the intestine. They also have a one-of-a-kind capacity to regulate stomach acid production. Fermented eggs can assist enhance (or reduce) the acidity of gastric secretions if the stomach's production of hydrochloric acid is low (or high).

  • Simple to Digest- The act of fermenting enables the components that make digestion difficult to break down. 

 For Example: Because kefir is fermented and practically lactose-free after the microorganisms have metabolized the milk sugar, someone who has difficulties digesting milk may respond well to it. Cauliflower is the same way. The fermenting process breaks down the carbs in sauerkraut, making it easy to consume. 

  • Increased nutritional bioavailability– In our stomach, bacteria and enzymes help break down food into a form that our systems can utilise.  Fermented foods are high in enzyme activity, which aids in the process and increases the quantity of nutrients absorbed by our systems.
