Winter has arrived, and we are resorting to our favorite cuisines for warmth and comfort. Hot chocolate, gajar ka halwa, and other warm sweet delicacies will always be our favorites, but another thing we look forward to in the winter is the seasonal vegetables.

Winter brings with it a bounty of green and other vegetables that may be used to prepare a variety of recipes for all meals. While we struggle to obtain a variety of vegetables in the summer, winter flips the script and provides us with a plethora of nutrient-rich vegetables. 

Seasonal produce is fresher and higher in nutrients as compared to out-of-season foods. So, it's important to have it till the time you can grab it all fresh. These winter special vegetables will also help you endure the harsh, frigid weather, strengthening you from within.

Mustard Greens

During this time, we all live for sarson ka saag. This traditional Indian dish is popular not only in Indian families, but throughout the country. This is the first thing you should pick up in the vegetable market. We certainly do. 

Beetroot

This dark-colored red vegetable is abundant with immune-boosting antioxidants and vitamin C. Beetroot is no longer just used in salads; it can now be found in kebabs, parathas, and even biryani. 

Radish 

Ah, those mooli ke parathe in breakfast - this is all we need to kick-start our winter days. Radish is high in vitamins and minerals such as zinc, copper, phosphorus, potassium, magnesium, and calcium. 

Carrot

Yes, we're finally talking! Gajar ka halwa is a winter must-have. But there's so much more you can do with this red vegetable: salad, juice, Indian sabzis, cake, and more. 

Sweet Potatoes

The very first bite of shakarkandi ki chaat warms us up. Sweet potatoes have that effect on everyone.  This fiber-rich veggie keeps you full for longer and is great for digestion too.  Sweet potatoes are essential in the winter. 

Spinach

Even though you can find spinach all year, it's only in the winter that you can acquire fresh, bright, nutrient-dense spinach. There is so much you can do with this iron-rich vegetable, from soups to sabzis to pasta. 

Fenugreek Leaves 

Methi is the finest thing that has ever happened to diabetics. This green vegetable is abundant in the diet throughout the winter. Besides helping in regulating blood sugar level, methi also aids gut health.
