Assam, one of India's north-eastern states, has its unique culture, way of life, and eating customs. The flavors of Assamese food are distinct and subtle. Rice is the state's main meal, and it comes in a variety of kinds, including Joha, Saul bora, japonica, basmati, and others. Masor Tenga 

This is a non-vegetarian meal that is perfect for the summer. The sourness comes from the addition of tomatoes, dried mangosteen, lemon, raw mango, and elephant-apple, and the term 'Tenga' means sour. The food is flavoured with fenugreek, five mixed spices (panch phoran), and mustard seeds, despite the lack of seasoning. It's a delicately flavoured sour fish curry that's finest served for lunch or dinner. It also helps with food digestion.

Aloo Pitika 

This recipe is simple and reminds me of mashed boiling potatoes with an Assamese twist. It's a comforting and quick-to-make side dish created by mashing cooked potatoes and frying them in mustard oil with onions, salt, and coriander pieces.

Ouu tenga 

This chutney has a sweet and sour flavor and is made with cooked mashed elephant apple (Ouu) and jaggery.

Duck meat curry 

This is another hidden gem that can take your breath away with just one bite. It's only served on special occasions. It's commonly made using ash grounds, but sesame, lentils, or pumpkins can also be used.

Silkworm 

Assam is notable for silkworms, as previously said. It's tasty and crunchy at the same time. Spices are added during the frying process to make the larvae crispier. This is something that most tribal people have, and it is something that everyone should have.

Khaar 

It is considered the main culinary dish that must be included in the large traditional Assamese thali. The dish is non-vegetarian and consists of raw papaya, taro, and pulses as the primary ingredients. To give it a particular flavor, the following ingredients are filtered through dried banana leaves. This meal is usually served with rice and is included in the lunch menu.
