Ayurveda, an ancient Indian system of medicine, emphasizes that honey should never be heated or cooked with milk.

Some people think it's dangerous to eat warm honey! That's because heating anything that contains sugars can promote the production of a substance known as 5-hydroxymethylfurfural, or HMF, which is thought to be naturally carcinogenic. However, this applies to all sugar-containing substances, not only honey. It has been determined that boiling honey will undoubtedly make it more poisonous.

According to National Centre for Biotechnology Information research, both boiling honey and combining it with ghee have harmful effects. According to the study's findings, "Heated honey (>140°C) combined with ghee forms HMF (Hydroxy methyl furfural), which may have harmful consequences and eventually behave as poison." The temperature rise for honey is limited to less than 140 degrees, which is far lower than the ideal temperature at which your glass of milk is likely to be. This is the reason behind the belief that heated honey can be Poisonous.

The level of HMF in heated honey increased relatively from 25 parts per million to 75 parts per million, according to the study's table comparing HMF quantities. Compared to the levels of HMF present in many other meals, that is significantly less. Furthermore, there is insufficient evidence to support the claim that HMF causes human cancer.

Mixing honey in hot milk may not be as toxic as Ayurveda would want you to believe. Although heating honey to temperatures above 140 degrees may be less healthy for you since some nutrients can get denatured. Making sure the milk has cooled down a bit before adding a spoonful of the natural sweetener is the ideal way to enjoy milk with honey.
