The most popular places to find and eat black carrot, also known as Kaali Gajar, are Turkey, Afghanistan, Pakistan and India. People are intrigued by this dark-colored vegetable because the carrot has long been recognized as an orange-colored vegetable.

People in the West have grown up assuming that carrots have always been orange, although Kaali Gajar existed across Asia and the eastern Mediterranean long before the orange carrot became popular in the 16th century. 

The color of Kaali Gajar is mostly attributable to a high concentration of anthocyanin. Orange and yellow carrots tend to be higher in beta-carotene. Kaali Gajar has a distinct flavor with an unexpected sweetness and a slightly peppery aftertaste.
