Know How to Prepare Superfood Salad

Eating a salad per day, loaded with vitamins and minerals, will increase the level of antioxidant compounds in your blood. There are several health benefits of having salads from maintaining a good digestive system to increasing energy in our body, the benefits are endless. Yet, there are some who aren’t familiar with the fact that salads are not just healthy but can be extremely delicious too.

Eating a salad per day, loaded with vitamins and minerals, will increase the level of antioxidant compounds in your blood. There are several health benefits of having salads from maintaining good digestive system to increasing energy in our body, the benefits are endless. Yet, there are some who aren’t familiar with the fact that salads are not just healthy but can be extremely delicious too.

This gluten-free and vegan salad is an immunity quick-fix for those trying to improve their immune system. It is filled with tasty nutrients such as vitamin A, vitamin C, magnesium, iron, and antioxidants abundant in superfoods such as chickpeas, broccoli, and blueberries.

Leafy greens, the base of any salad, provide a significant nutritious value. Kale, spinach, beet greens, watercress, and lettuce are among the best in the group of super greens. 

Here is the recipe of this Super Salad:

Ingredients for Superfood Salad

1 cup boiled chickpeas, 1 cup sliced strawberries, 1/2 cup chopped onion,1 Bunch raw kale leaves or lettuce leaves, 1/4 cup seeds of your choice

For chia balsamic dressing:

1 tbsp chia seeds, 1/4 tsp table salt, 1/3 cups water, 3 tbsp balsamic vinegar,1 finely minced Garlic clove

Steps to prepare the salad:

  • Prepare the dressing for the salad by tossing in a mixing bowl the ingredients. Using a spoon for a thinner consistency, whisk all the ingredients together by hand. Alternatively, for a thicker texture, pulse all ingredients in a blender.

  • Keep the dressing mixture aside, and as the chia seeds absorb water and swell up, they will naturally thicken.

  • Wash, massage, and manually tear the kale into bite-sized pieces by hand. Drain the chickpeas that are boiled or canned and add them to the bowl of shrunken and softened kale. Add the mixture of onions, strawberries, and blueberries. 

  • Toss the dressing into the mixture of the salad and coat all the ingredients evenly. Sprinkle the top with any seeds of your choice.
