Soy milk is plant-based milk and the best alternative of cow milk for vegans. Soy milk offers a healthful nutritional profile. It includes omega-3 fatty acids, flavonoids, vitamin A, B-12, and D, as well as calcium.

It contains as much protein as cow’s milk, yet lower in calories than whole milk and about equal to the calories in 1 percent or 2 percent milk.

Soy milk can be prepared at home, it is preservative and additive-free. It can be used for drinking, making tofu, making soy yogurt.

Soy milk must be prepared from white soy.

Ingredients

Soybeans- 1 cup

Water- for soaking and blending

How to Prepare?

  1. Soak a cup of soybeans in 4-5 cups of water and let it stay for overnight (around 1-12 hours).
  2. Discard the excess water and rinse soybeans.
  3. Remove the outer skin of soybeans.
  4. Put the soybeans in the mixer grinder and add 2-3 cups of water.
  5. Blend it for few seconds, then add some more water.
  6. Blend it until smooth.
  7. Add the water to make milk-like consistency.
  8. Heat the prepared milk on the medium flame in the heavy bottom pan, and stir it continuously for around 15-20 minutes.
  9. Let it cool down, then strain the milk using a muslin cloth, and squeeze out the milk.

And, soymilk is ready. Put it in the refrigerator. This milk can be used for up to 4-5 days. And, if not put in the refrigerator, then it must be consumed within 2 days.

The leftover fiber in the muslin cloth is called okra. It can be dried in the sun and used for cooking, or it can be directly added to the flour while preparing chapatis.

And forget not, excess consumption of soy milk can lead to many health problems, so just a glass of soy milk per day is sufficient.
