Recipe to a yummy licious Tomato soup (Avoid the packed ones as they contain preservatives):

Ingredients:

2 tbs oil

1 carrot, chopped

1 large onion, thinly sliced

2 tbs homemade tomato paste

800 gms tomatoes, blanched and pureed

2-3 cups water

Fresh coriander for garnishing

Method:

In a large pot heat oil. When hot, add the onion and carrot, salt and pepper (as per taste), and cook. Keep stirring, until the vegetables begin to soften to prevent from burning.

Add the tomato paste and lower the heat. Add the blanched and pureed tomatoes. Cook, stirring occasionally until the tomatoes break down (10-15 minutes). Add 2 cups of water and bring to a boil. At this point you can adjust the heat.

You can adjust the consistency of the soup as per your choice. This is completely optional. You can strain the soup if you don’t like it grainy. Garnish with fresh herbs, and you are good to go.

You can add baked croutons and if you want to add cream, try some healthier options like coconut cream.

Winters are coming, and we all know we tend to gain weight a little this season because of the consumption of foods that keep us warm but contain high amounts of fats. This winter season we need not to worry about good comforting & delicious food and weight gain.
