Mango and Chia Seed Pudding


1 ripe mango, peeled and chopped

1/4 cup chia seeds

1 cup almond milk

1 tablespoon honey or maple syrup

1/2 teaspoon vanilla extract


Blend the mango into a smooth puree.

In a bowl, combine the mango puree, chia seeds, almond milk, honey, and vanilla extract.

Stir well and refrigerate for at least 4 hours, or overnight, until the mixture has thickened.

2 ripe avocados
