On chilly winter days, a cup of hot broccoli soup is the perfect comfort meal. This traditional soup recipe is simple enough for a weekday supper and nearly fully cooked in one pot.

This quick and simple cream of broccoli soup takes less than 30 minutes to prepare and is smooth, delectable, and creamy. This soup is one of my go-to weekday meals since it's simple to prepare and simple to clean up, plus it's packed with fresh broccoli and a few other cupboard essentials.

Broccoli is surprisingly not a favorite vegetable in many households, so we have to find inventive ways to cover it up in dishes like this soup!

Before serving, you may add some cream as a garnish to the soup to give even more flavour.

Recipe for Broccoli Soup

Once you master the recipe for making broccoli soup, you can make almost any vegetable into a creamy soup. How to begin going is as follows:

Create the Flavour

By sauteing chopped onion, celery, and garlic in a mixture of butter and olive oil, the actual taste is developed. These vegetables offer salty and sweet aromas to the broccoli that balance it out without competing with it. By mixing butter with olive oil, we obtain the creamy, nutty flavour of butter with less saturated fat, which adds richness. The next addition is thyme or parsley for some herbal overtones. Your preference will determine which one you select. While thyme is more aromatic and woodsier, parsley is gentler and offers a fresh, green flavour. You can't go wrong with either (or both), they both go well with broccoli!

Time to Add Broccoli

In the simple broccoli soup, stems and florets of broccoli are used. Eight cups of chopped broccoli may be made from one medium-sized or larger broccoli head. To ensure consistent cooking, your floret and stem parts should all be around the same size. Use pre-cut broccoli florets to save time. Using frozen broccoli in this recipe is not advised since the taste may be diminished. Broth and water are combined to cook the broccoli. Combining these ingredients is a simple technique to reduce the salt content, which is frequently excessive in soups.

Mix The Soup

It's time to combine the soup after the vegetables are lovely and tender. It's crucial to avoid overfilling your blender. If the soup fills more than two-thirds of the blender, mix the soup in portions. Remove the centerpiece from the blender top, then cover the hole where the steam should escape with a clean kitchen towel (and prevent burns). The soup has a creamy texture without cream when it is well blended, but if you like a richer soup, you may add a half cup of half-and-half after it has been mixed.

Ingredients to Make Broccoli Soup

Serving: 2

  • 10 grams of butter

  • Extra virgin olive oil, 1 tablespoon

  • 1 chopped medium onion

  • 1 sliced celery stalk

  • 2 chopped garlic cloves

  • 1 teaspoon freshly chopped parsley or thyme

  • 8 cups of broccoli, chopped (stems and florets)

  • 2-cups of water

  • Salt, 1/2 teaspoon

  • to taste, freshly ground pepper

Method to Prepare the Soup

Step 1

Heat the butter and oil until the butter melts. Add the onion and celery, and simmer, stirring occasionally, for 4 to 6 minutes, or until tender. Add the garlic and thyme (or parsley) and stir-fry for 10 seconds or until fragrant.

Step 2

Add broccoli and mix. Add water and broth, and then heat to a vigorous simmer. Cook for approximately 8 minutes, or until very tender, while reducing heat to maintain a brisk simmer.

Step 3

Blend the soup in batches until it is completely smooth. Add the salt and pepper as per requirement.
